If pancakes and Nutella had a baby, it would be these gluten-free Nutella stuffed pancakes.
If you want a warm, fluffy stuffed pancake with rich and creamy Nutella but can’t eat the gluten or want the high sugar content then I have the perfect recipe for you.

These stuffed pancakes are all the rage
But! I have one problem with them. The high-sugar content of Nutella and copious amounts of gluten in the pancakes which makes most people want to take a nap after eating it.

Nutella has over 20 grams of sugar in one serving (2 tablespoons) which is almost your whole days worth of sugar. There is a better way to make these delicious stuffed pancakes with less sugar, and no gluten.

1) Almond Flour

2) Tapioca Flour
- Tapioca flour is a good source of dietary fiber which can support digestive health.
- It has a low glycemic index, which can help to regulate blood sugar levels and reduce the other hormone imbalances
3) Eggs
- Eggs are a great source of vitamin D and zinc, both of which are important for proper hormone regulation.

This is my favorite lower-sugar option for Nutella. It has 40% less sugar than Nutella and it comes in different options for cocoa percentages. You can find it here
Equipment
1) Electric Round Griddle
I bought this thinking I could make gluten free tortillas easier since they tend to be on the small end. Turns out it worked great for these pancakes too. I LOVE dash products so I highly recommend trying them out for yourself.
2) Round Silicone Molds
If you want the perfectly round and easy to flip pancakes then I highly recommend getting some egg molds. I really like these because the handle rotates to the side making closing the lid easier.

Gluten Free Nutella Stuffed Pancakes
Equipment
- 1 Ring mold
- 1 Griddle
Ingredients
- 1/4 Cup Almond Flour
- 1/4 Cup Tapioca Flour
- 1.5 Teaspoons Baking Powder
- 1 Tablespoon Monk Fruit
- 1/4 Teaspoon Salt
- 2 Eggs
- 3/4 Cup Dairy Free Milk
- 2 Tablespoons Coconut Oil
- 1 Tablespoon Honey
- 1-2 Tablespoon Nutiva Spread
- 3-4 Sliced Strawberries
- Drizzle of honey Optional
Instructions
- Line a pan with parchment paper. Spread 1-2 tablespoon of the chocolate spread and make a 1/4 inch thick circles. Freeze until solid
- In a mixing bowl, add the almond flour, tapioca flour, baking powder, monk fruit, and salt together. Mix it all together and make sure everything is evenly distributed.
- In a separate bowl mix eggs, milk, coconut oil & honey.
- Add wet ingredients to dry ingredients and mix together.
- Add nonstick, cooking spray to the griddle and heat it on medium-high heat. Alternatively, you can use a hot plate (or quesadilla maker) like me.
- Place the ring mold on the griddle and pour in 1/4 cup batter. Then place 1 frozen chocolate spread puck on top of the batter. Add more batter on top of the chocolate and cover or close the lid.
- Flip if not using a machine. Wait until the batter is set before removing the ring mold. Top with honey and strawberries and enjoy.
